Meal Plan Monday 10/ 8- 10/9

I know it’s not Monday… but meal plan Tuesday just doesn’t have the same ring to it. I have no excuse for not posting this yesterday. Well… I am trying to get ready for an artist market this weekend in town. I’m pretty excited about it!

Ok… here’s the plan for the week:

Monday: Pepperoni Pizza Bites

Tuesday: Tacos

Wednesday: Easy Garlic Chicken

Thursday: Lentil Soup (see below for recipe) with sour cream biscuits

Friday:  Leftovers

Saturday: Out to eat with my earnings from the market (hopefully)


Lentil soup has been one of Brian’s favorites since he had it on our honeymoon. I don’t know what recipe the cruise ship restaurant used, but here’s my version:

1 cup onions (diced)

1 cup carrots (chopped)

2 Tbs oil

1 cup lentils.

1 cup rice

1 can (16 oz ?) tomato sauce

1 can low sodium chicken broth

1 Tbs cumin

1. 5 cups milk

Heat the oil in a large saucepan. Saute carrots and onions in the oil until tender. Add every everything else except the milk. Bring to a boil, then reduce heat to low and cover. Let simmer for an hour. Place the soup in a blender or food processor and blend until smooth and creamy. Return soup to pot and stir in milk. Heat until heated through. Serves about 9.

Sour Cream biscuits:

2 cups flour (self rising)

1 cup butter

1 cup sour cream

Divide into muffin tin (ungreased) and bake at 350 for 20 minutes

of the day…Elijah lost his fourth tooth last week. It’s funny.. seeing him with no teeth makes him more little too me. He’s always been an “Old Soul”… it’s nice to see the little in him every now and then.


Meal Plan Monday 10/1- 10/5

My laptop  is still on the fritz and we have been traveling A LOT!… hence the lack of blogging happening. I have loads of fun beach pictures, but the computer I’m on is not the most uploading friendly… so… those will have to wait.

I figured that I can at least post our menu for the week:

Monday: Creamy Chicken Casserole (Abigail’s request)… incidentally… this is only like 180 calories per cup.. not too shabby for those of us who are calorie counting!

Tuesday: Balsamic Pork Roast 

Wednesday: Leftovers

Thursday: Taco Pockets

Friday: Garlic Chicken… this is really easy and really yummy!

For sides, I usually just pick a bag of steam fresh veggies or salad and carrots. Occasionally, we will have bread with a meal… like crescent rolls with the creamy chicken casserole.

Meal Plan Monday- 9/10- 9/14

I’m using Brian’s laptop today… mine died… well… is critically ill. I am so sad. I haven’t backed up any of the family pictured since January… Tybi’s first year of life is on that computer!



Okay… that’s out of my system… here’s this week’s meal plan:

Monday… Creamy Chicken Casserole (See Below for Recipe)

Tuesday… Quesadillas

Wednesday… Leftovers

Thursday… Crock Pot Roast with Potatoes and Carrots

Friday… leftovers


Creamy Chicken Casserole (one of the kids’ favorites)

3- 4 breast of chicken, cut up, raw

1 cup instant rice

2 cups sour cream

2 cans cream of mushroom soup

1/2- 1 sleeve of ritz crackers

Preheat oven to 350. Mix chicken, rice, sour cream and soup (I also like to add poppy seeds, but they aren’t necessary) together and cook for 35 minutes. Remove from oven, stir and crush ritz crackers over the top. Return to oven for another 15 minutes.

This meal goes well with green beans and crescent rolls.

Meal Plan Monday 8/ 27- 31

Brian planned the meals this week. I’m glad he did. Its nice to have another perspective now and then:

Monday: Key West Chicken Kabobs (again… this was on the menu last week… are we seeing a pattern here. Not every meal planned actually gets to make it on the table)

Tuesday: Taco Pockets … we just had these a couple of weeks ago, but they were a big hit.. so we’ll have them again.

Wednesday: Crock Pot Lasagna (see below for recipe)

Thursday: Leftovers

Friday: Tater Tot Casserole


My Crock Pot Lasagna Recipe:

1 1/2 pounds ground beef

2 Can Tomato Sauce (you might only want to use a can and a half. I make sure there’s extra liquid to account for the no cook noodles)

Italian Seasoning


1 package no boil lasagna noodles

8 oz. cream cheese

1/2 cup sour cream

large carton cottage cheese

1 bag of Kraft Italian Cheese w/Philadelphia cream cheese


1. Brown Meat in Skillet and drain grease. Add tomato sauce and Italian Seasoning and Garlic to taste. Heat through and remove from heat.
2. Mixes Cheeses and Sour Cream in a separate dish

3. In crock pot, layer sauce, noodles, cheese and repeat until full… you’ll probably have to break the noodles to make them fit. Don’t be afraid to do a couple of layers of them at a time.

4. Cook on low for 6- 8 hours

We gave Tybi puffs for the first time and she kept sticking them to the edge of her mouth like this… She looks like she already has teeth up top!

Elijah, on the other hand, lost his third tooth recently!

Friday: Chicken Alfredo Stuffed Pasta Shells (these got neglected last week to, but Elijah’s been really excited about them.. .so we’ll try again this week)!


We will also be having LOTS of apple treat this week… we went apple picking over the weekend. We’ve already made a pie and apple butter!

Meal Plan Monday- 8/13- 8/17

Last week we started school and I inevitably got sick… I’m still sick, but I’m sick of being sick… so I’m pretending that I’m all better. On a bright side, however… school went well and the kids seem excited about the new school year!

Here’s the Meal Plan for the week:

Monday: Crock Pot Chicken and Dumplings with Peas on the side and Chocolate Chip Oatmeal Raisin Cookies for Dessert

Tuesday: Taco Pockets (new recipe for a twist on Taco Tuesday)… the recipe calls for chicken, but I am using beef. Corn on the cob from the garden on the side

Wednesday: Leftovers

Thursday: Apple Honey Pork Roast (trying two NEW recipes this week… watch out… this girls unstoppable) with whatever steam fresh veggies I have lying around the freezer.

Friday: Lentil Soup… one of Brian’s favorites with sour cream biscuits

Saturday: Chicken Alfredo Stuffed Pasta Shells with salad

First Day of School 2012

In lieu of Meal Plan Monday, I’m sharing some pics from our first day of school. I wasn’t planning on starting school for a couple of more weeks, but we’ve been getting packages in the mail with school books and I got a laminator for my birthday that I’ve been playing with. Elijah couldn’t take it any more… he was begging to start school.
So… I scrambled around this weekend getting things ready for the kiddos to start this morning. I never know what grade to say the kids are in… according to their ages, Elijah is in second grade and Abigail is in Kindergarten… BUT Elijah is doing a third grade spelling and math, reading on a 12th grade reading level,etc. Abigail is doing a first grade curriculum and plugging on ahead in math. God has blessed these kids with quick minds. Elijah loves to read and Abigail is really bright when it comes to math. It’ll be interesting to see how the year goes with both of them “doing school.” Selah has things she can do if she wants to join us. She’s the wildcard for sure.

Meal Plan Monday- July 30- August 4

This is just one of those weeks when I am SO hungry and craving some serious comfort food. Thankfully I planned the menu before the cravings hit (and NO, I am NOT pregnant)…

Here’s what’s up for the week:

Monday: Crock Pot Teryaki Chicken (yes, this was on the menu last week, but we ended up with quite a few leftovers from other meals that needed to be eaten)

Tuesday: Quesadillas… we had steak over the weekend. I will cut up the leftovers and add taco seasoning. I’ll also cook some chicken in the crock pot to shred and season.

Wednesday: Chick Fil A… We will be heading over to Chick Fil A to show our support for the business and it’s founders. If you want to read more about that, visit THIS SITE.

Thursday: Spaghetti (or crock pot lasagna)… I haven’t decided yet

Friday: Pepperoni Pizza Puffs… I double the recipe on everything but the italian seasoning

Saturday: Leftovers!

Meal Plan Monday

I don’t feel fit to plan meals this week… I just ate chocolate chip cookies and milk for dinner last night… whew… there I feel better now that I have confessed that.

Moving on to the meals for the week:

Monday: Tater Tot Casserole served with salad

Tuesday: MY BIRTHDAY… I’m not in charge!

Wednesday: Teryaki Chicken in the Crock Pot served with rice, carrots and broccoli

Thursday: Tacos with cousins who are visiting from Atlanta!

Friday: Sweet Potato Biscuits with ham and swiss cheese


And… here’s your picture for the day… I promise I don’t make them dress in matching outfits… they planned it all themselves. The girls coordinate almost daily!

Meal Plan Monday

We went to Target this morning… it was lunch time by the time we left. I SO badly wanted to just swing by MacDonalds and pick up lunch for the kids, but I didn’t. I am trying to be frugal and resist the temptation to eat out… although it would have been easier… However, if we had eaten out, Elijah would not have discovered his “new most favorite sandwich”… pizza flavored string cheese and pickles. Appetizing, right?

Onto this week’s dinner plans:

Monday: Bacon Cheeseburger Meatloaf (one of my favorites) with cheddar garlic biscuits and green peas

Tuesday: Taco Stuffed Pasta Shells

Wednesday: Leftovers

Thursday: Creamy Chicken Casserole with crescent rolls and green beans (from the garden)

Friday: Black Beans and Rice (with salad)
